Trahana is a kind of pasta made of flour and milk. It has got a granular and mostly irregular shape. Each grain is approximately 2-3mm wide. There are two varieties of trahana: Sour trahana and sweet trahana.
Sour trahana is made with sour milk or yoghurt. It can be cooked as soup, with plenty of water or in a thicker form; this depends entirely on personal taste. Both sour and sweet trahana do not need a lot of time to cook, approximately 5-10 minutes. Sour trahana is ideal in a chicken soup or even plain with tomato sauce. Sweet trahana is usually cooked in vegetable broth as soup.
